I’m back sharing another one of my absolute favorite and Go To recipes for our monthly rotation.  These Greek Tacos are the best because they are made to order. Your family can make their own just the way they like.  They are saved on my Pinterest board I call Carnivores & Vegetarians, which is where I save recipes that work for both veggie and meat eaters without making two separate meals.  The other reason I’m in love with them is because they are so easy. Beyond easy actually and they taste like they were hard work. You’ve got to add them to your menu plan this week and if you don’t have a menu plan, you now know the first thing to put on it!  My hope with sharing my favorite recipes with you is I can inspire you to eat well and fall in love with cooking just a little bit so dinner prep can be fun! INGREDIENTS

2 lbs frozen ground turkey (I’m sure ground hamburger would work, as well, I just haven’t tried it.)

1 tsp garlic powder

4 tsp lemon pepper, divided

1 tsp onion powder

1 tsp oregano

1 can garbanzo beans, drained 

2 cups cauliflower florets

1 tbsp olilve oil

Whole Wheat pita breads

½ cup feta cheese

Tomates diced

Cucumbers diced

Tzatziki dressing

For Tzatziki:

1 cup plain greek yogurt

1 cup grated cucumber

1 tbsp dried dill

¼ tsp salt

1 tbsp lemon juice

1 tsp fresh garlic

Fresh ground pepper

INSTRUCTIONS

Place the ground turkey in your slower cooker and top with garlic powder, 3 tsp lemon pepper, onion, and oregano.  Cook on low for 4 hours. Occasionally break up the meat with a spoon if you are home to do so. If not, it will be okay without, you just might end up with some spots that get a little browned on the edges.  That’s it, guys. It’s so easy. When it’s time for dinner, just give it a good mix and your meat is ready to go. You could obviously brown the meat and add the spices right at dinner time, as well. I just like the slow cooker way because it’s one less thing to do when getting everything prepped.  

Preheat your oven to 425.  Place the cauliflower on a baking sheet and cover with olive oil and 1 tsp lemon pepper.  Roast in oven for 10 minutes. Remove from oven and add the can of garbanzo beans. Add a little more olive oil and a dash more lemon pepper if desired.  Roast for 15 more minutes.  

To make the tzatziki dressing, combine the yogurt, shredded cucumber, dill, garlic, lemon juice, salt, and pepper.

To assemble the tacos, spread the tzatziki dressing on your pita.  Layer the ground turkey, garbanzo beans, cauliflower, tomatoes, cucumbers, and feta cheese, or whatever options sound the best to you.  My husband goes for all of it. I just do the beans, veggies, and cheese. My kids all have their own version, some with veggies, some without.  But, this is where it gets fun and they get to experiment with trying different flavors. Both my middle boys learned how amazing roasted cauliflower through this meal.
